General comment | Maltose syrup is a sweetener used as a substitute for other sugars in recipes. It is not as sweet as high-fructose corn syrup (HFCS) but is used in food and beverage manufacturing for its texture and shelf-life extending properties. Maltose syrup can raise blood glucose levels but has a relatively low glycemic index (GI) compared to other sugars. It is a concentrated source of calories, similar to other sweeteners. Maltitol syrup, made from hydrogenation from high-maltose glucose syrups, is suitable for people with diabetes and those wanting to reduce sugar in their diets. |
