General comment | Alpha-amylase, or middle-temperature starch enzyme, is produced by deep fermentation and purification of the spores of the fungus Aspergillus oryzae, which can efficiently hydrolyze the alpha-1,4 glycosidic bonds in starch, soluble dextrin, and low molecular weight sugars, causing the viscosity of the solution to quickly decrease and decompose into dextrins and low molecular weight sugars of different lengths. |
