General comment | Amylase is an enzyme that splits starch into smaller carbohydrate molecules such as maltose. It is a heterogeneous calcium-dependent metalloenzyme of molecular weights varying from 54-62 kDa. It exists as two isoenzymes: pancreatic (P-type) and nonpancreatic (S-type). Amylase is a digestive enzyme predominantly secreted by the pancreas and salivary glands and found in other tissues at very small levels. |
